Bottarga is not easy to find in a pressed form in local shops even ialian specialty shops. But there are Sardinian and Sicilian dishes tha call for freshly grated Botarga as an ingredient. This is a much appreciated addition to my Italian larder.

I remembered the panforte in Italy as dense, chewy, studded with nuts and with perfectly balanced spices and fruits. This Christmas I bought some locally and it was atrocious.
